Kolatin Real Kosher Gelatin has a multitude of uses in industrial
food production. It can be used, for example, as a thickener,
gelling agent, emulsifier and stabilizer. Gelatin is used to enhance
a variety of commercially processed foods, including yogurt, ice
cream, marshmallows, chocolate fillings, canned meat, gummy candy,
soups and salad dressings. Gelatin requirements vary greatly,
depending on the particular application. Kolatin is available in a
broad range of; Bloom strengths (potency), mesh size and viscosity
combinations and it can be custom manufactured to your required
specifications.

Gelatin Desserts
Gelatin desserts include ready-to-eat flavored gelatin and dry
blended powdered mixes. Using a high-quality gelatin like Kolatin
Real Kosher Gelatin will improve the clarity and color of gelatin
desserts. It is also economical—using less of a higher grade gelatin
like Kolatin to produce a product with a specific firmness, compared
to more of a lower grade gelatin, will save you money.
Dairy Products
Gelatin can enhance a variety of dairy products in various ways. It
provides a smooth, even-textured consistency and creaminess to
products, and can mimic the mouthfeel of fat in low- or no-fat
products, a growing segment of the market. Other qualities that make
gelatin an asset in the dairy manufacturing process include:

Bakery Products
Gelatin is used as a stabilizer in various types of icings,
frostings, and fillings. It prevents crystallization of these
components and lends a smooth texture and glossy sheen to them.
Gelatin is also added to bakery glazes as a stabilizer. It prevents
the glaze from drying out and cracking on the surface.
Confectionery Products
Gelatin is used in a variety of gelled confections, including gummy
candies, jujubes, gumdrops and wine gums. Gelatin provides textures
ranging from soft and elastic to hard and chewy, depending on the
bloom strength and formulation.
In aerated confectionery products such as marshmallows, nougat and
marshmallow meringues, gelatin serves as a whipping agent and foam
stabilizer. It also prevents crystallization and ensures a smooth
texture and longer shelf-life.
In confectionery products such as toffees, caramels and licorice,
gelatin acts as a binder and also aids in moisture retention,
extending the shelf-life of products.
In filled confections, a gelatin solution can be used to seal the
centers before chocolate or sugar panning. This prevents moisture or
oil from migrating from the center to the shell of the confection.
Gelatin can also be used to add body and replace fat in various
filling for chocolate bonbons and confections.
In milk caramels and toffees, gelatin is added to emulsify the fat
and give the product a chewy texture.
Meat Products
Gelatin has many applications in the meat product category. It is
used in the coating of cooked meat and sausage products, giving it
an appealing appearance and preventing moisture loss in the product.
It is also widely used in the manufacture of canned meat products
such as chicken, corned beef and tongue. In this application,
gelatin absorbs and stabilizes meat juices and enhances the protein
balance of the final product.
In pâtés, gelatin acts as a fat emulsifier, and acts to bind juices,
stabilize the product to prevent it from crumbling when sliced.
Other Food Applications:
Gelatin is frequently used as a thickener and emulsifier in soups,
gravies and sauces. It is also used as a thickener and stabilizer in
low-fat mayonnaise and salad dressings, and in myriad other
applications.
